4th of July Cake + Cocktail

Ready for the Fourth?  All you need is this delicious cake and some lime shandy!  Luckily, here are the recipes.

Make these 3 recipes separately, then assemble.

1 c. water
1 ½ c. sugar
handful fresh basil leaves, rinsed

Combine all ingredients in a small sauce pan and heat over low heat, stirring occasionally, until mixture simmers. Allow to simmer for 10 minutes then cool to room temperature. Strain syrup and refrigerate until ready to use.

3 c. flour
2 c. sugar
1 T. baking powder
1 t. sea salt
3 eggs
½ c. lemon juice, plus zest of two lemons
1 t. vanilla extract
1 c. buttermilk
1 c. olive oil

Whisk together flour, sugar, baking powder and salt.
In separate bowl, mix eggs, lemon juice and zest, vanilla, buttermilk and olive oil.
Make a well in the center of the dry ingredients.  Pour egg mixture in the well and then gently fold all ingredients together. Don’t overmix!
Pour into a greased 9” cake pan and bake for 50 minutes to 1 hour at 350 degrees. Cake will be a deep golden brown.

6 egg whites at room temperature
1 ½ c. sugar
2 t. corn starch
½ T. lemon juice
1 T. vanilla paste

In bowl of mixer, whisk egg whites until fluffy, then add sugar a little at a time until stiff peaks form. About 6-7 minutes.
Add lemon juice, vanilla and cornstarch, then mix another minute to incorporate.
On a parchment-lined baking sheet, trace a 7” circle. Spread egg white mixture on the parchment circle and make a slight indent in the center.
Bake at 250 degrees for 1.5 hours, then turn oven off and let pavlova sit inside one hour to cool.

1 cup heavy whipping cream
½ cup sugar

In mixing bowl, whisk whipping cream and sugar until fluffy and slightly stiff.


Put olive oil cake on cake stand, drizzle top heavily with basil syrup and allow it to soak in.
Place pavlova on top of syrup-soaked cake, then top with whipped cream and strawberries.

Look for a light and citrus enhances beer, such as a Belgian Ale or light IPA
Add club soda or a citrus flavored soda
Add 1 ounce ICONIC COCKTAIL kaffir lime tonic (or similar)
A squeeze of lime juice
Sliced limes
